Description

Composition:
Arabica Santos Cerrado Fasenda Cerro Alto – Specialty Coffe.

Description:
A sweet and fragrant coffee with hints of chocolate.
With an SCA score of 82-84 points, this coffee is classified as Specialty Coffee thanks to a quality control that includes an analysis of the soil and the care of the plant’s nutrition.
The Cerrado Mineiro region, located in the northeast of the state of Minas Gerais, is recognized worldwide for the high quality of the coffee with an annual production of about five million bags and over two hundred thousand hectares cultivated. Furthermore, Cerrado Mineiro was the first Brazilian region to be recognized as a PDO producer, demonstrating the link between the product and its territory.
The tropical climate alternates between a dry winter and a humid summer, making this region ideal for the natural growth of coffee. The main harvest season starts from June until September.
In the cup, the coffee has balanced acidity, notes of chocolate given by the sweetness of sugar cane, and a small note of salinity.
In most arabica producing countries the coffees are washed, but in Brazil all the coffee is processed dry. After the careful harvesting of the ripe berries, the beans are cleaned and exposed to the sun for about ten days, up to a maximum of four weeks. The outer layer of the dried berry is then removed with a glossing process before the beans are selected, graded and packaged in 60 kg bags.
The average temperature, the low rainfall during the harvest period and the ideal altitude are some of the factors that make “Cerro Alto” one of the most popular varieties of arabica among coffee connoisseurs.

Optimal preparation:
Ideal for moka and filter.
